Pho-rocious!!!! Rawr!!!

My friend and I have been getting our Pho on for about a year now. Suprisingly, Phoenix AZ offers many choices for Pho action. Our favorite place is called Pho Mesa. It's amazing how addictive the stuff is. No matter where I go, I always get the same thing- Pho with tofu and vegetables. And save the tofu for the end when it's time for hot chili sauce. A couple of questions: Anyone here have a good Pho recipie that doesn't involve boiling oxtails? Is there a substitute that'll get the job done? Also, what is in fish sauce? Because it's not the same thing you buy in bottles at the store, and it varies from day to day at the place we go to (as I'm sure it varies in other areas) but just wondering how many people make pho happen as home sucessfully.

ok.. i love pho and i didnt know where else to turn..
off and on ever since i started eating pho, i'd get this weird sensation like my head was inflating or something.. kind of numb and pressurized. it seemed weird, but wasnt that bad and it didnt happen every single time. i tried (by trial and error) to figure out if it was the sriracha, the plum sauce, the tofu, etc etc etc but i couldnt pin it down.
i hadnt had pho for a while and i went to have it for lunch and oh my fucking god, i reacted so strongly. my whole head went numb very quickly and spread down my spine and back to my arms.. it feels almost like mild paralysis. what the hell is wrong??
has anyone else experienced this or heard of others with pho allergies? i've been tested (years ago) and i'm theoretically only allergic to milk.. sooooo i dunno.
but really, i can barely function.

Hello :)

Hi, my name is Mandy and I've been eating Pho for probably a good 8 months now.. I've never had pho before I met my husband. He is half Vietnamese and introduced me to this wonderful treat (as well many other Vietnamese dishes such as Goi Cuon) and his mother has made many Vietnamese dishes as well that I don't remember the names to.

Anyway, I usually always get Tai Gan Sach Bo Vien. I love lots of basil and lots of lime juice. I usually put one pice of the hot pepper in it and some bean sprouts.

I absolutely love this dish, my husband has gotten me addicted to it. Which is good b/c he loves it too and we usually have it at least once a week.

I live in the DC area so there are plenty of places to choose from, and my mom back home in Illinois recently told me they are opening up a Pho restaurant near her work! So now my whole family can enjoy pho as well. Although when my mother and brother came out and visited me a couple months ago, my brother thought it was disgusting. (I think he didn't like the whole idea of eating tripe.)

All in all I am very happy to see this site, and other people that like pho as much as I do! :)
